Healthy and Delicious Carrot Souffle {Gluten Free}

Carrots?  Yep, I’m a fan.  

I like my veggies, but I love when I find a yummy recipe to kick the delish factor up a notch.  I can easily get tired of eating them raw or cooking them steamed, grilled, or sautéed over and over and over again.

Ya feel me?  Bor-ing.

Over the years, I’ve found the easiest way to live a healthy lifestyle is by keeping it fun, yummy, and inspiring as much as possible.

Speaking of inspired…

I was raised to eat a balanced meal with some type of vegetable on my plate.  From my childhood years, I’ve kept the tradition of having a down home cooked meal for Sunday night dinners, mmmh-mmmh good.

Planning what to cook one weekend, I was over our usual vegetable choices.

SO…I looked to see what we had in our fridge and started to think outside of the box.

I saw we had some carrots – and bam!

I remembered going to Piccadilly back in the day, a home-style restaurant in NC, and I fell in love with their carrot soufflé!

It was slammin’!

I Googled the original recipe and after I saw just how much sugar and butter was in that addictive deliciousness,

I got inspired to make a healthier version. ; )

Staying in flow with a healthier lifestyle, I decided to create my own recipe – kicking out the type of butter, sugar, and flour that the original one called for.

How did it turn out on my first try?

I have to say, it was a slam-dunk and has been every since, boom.

My fave times to serve it up…

Not only is it perfect for dinner during the week – it makes for a great summer dish, nicely compliments a potluck dinner, and offers a sweet and savory dish for the holidays.

Warning and be prepared – at dinner parties, it will be unexpectedly enjoyed and highly talked about. 😉

It always gets rave reviews from all the guests and I always go home with an empty dish.

Ok superstars, I won’t keep you waiting any longer, I’m gonna share my healthier, yet sinfully tasting version of this delicious carrot soufflé so you can have another veggie dish to get excited about.

My Delicious and Healthier Carrot Souffle {Gluten Free}:
Ingredients:
Servings: 8

  • 2 lbs carrots, chopped( I buy 2 bags of organic baby carrots)
  • ½ cup melted Grass-fed Ghee butter – learn healthy benefits below
  • 1 cup maple syrup(or less)
  • 3 tablespoons GF all-purpose flour (or almond flour)
  • 1 teaspoon GF baking powder
  • 1 teaspoon vanilla extract
  • eggs, beaten

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Bring a large pot of salted water to a boil.
  3. Add carrots and cook until tender, about 15 minutes.
  4. Drain and mash.
  5. To the carrots add melted butter, maple syrup, flour, baking powder, vanilla extract and eggs.
  6. Mix well and transfer to a 2 quart casserole dish.
  7. Bake in preheated oven for 30 minutes.
